Mexican food is so vibrant and full of lots of colors and flavors. We’re all used to having dishes like nachos or fajitas, but Mexican breakfast dishes are less common. That’s a real shame because there are some incredible recipes for delicious Mexican breakfasts that are unlike anything you would normally have.

Breakfast is one of those tricky meals that often becomes boring. We get stuck into a routine of eating the same thing over and over because breakfast feels more like a functional meal instead of one to be enjoyed. However, if you want to do something a bit more special with your breakfast, why not try one of these amazing Mexican recipes?

Breakfast Burritos

Breakfast burritos are one that you are probably familiar with already. Taking the concept of a burrito and then filling it with whatever breakfast foods you like is a great way to start the day and you have so much flexibility. If you want something delicious and decadent then you can fill it with eggs, sausages, and plenty of cheese. But if you are trying to eat a healthy breakfast that will set you up for the day, why not go for black beans and avocado instead? The more you experiment, the better recipes you will find. Chilaquiles

Chilaquiles are a more traditional Mexican dish that is often eaten for breakfast but can be eaten for lunch or dinner too. The tortillas are put in with the salsa and some broth before being topped with cheese and put in the oven, so this is more like a casserole style dish as opposed to the nachos that you are used to.
