VISIT STELLENBOSCH

Stellenbosch Wines and TheLondonFoodie hosted a special #VisitStellenbosch evening recently to celebrate the wines from Stellenbosch. The evening demonstrated the quality of the wines from this famous South African wine region, and its diversity in pairing with a range of flavours. TheLondonFoodie – chef, author and supperclub host – is also extremely well known on the London food scene, having graduated from Le Cordon Bleu to run his own highly successful supperclubs to publishing his acclaimed cookbook “Nikkei Cuisine: Japanese Food the South American Way”. TheLondonFoodie provided a specially selected Japanese and Nikkei menu to pair with the Stellenbosch wines that we had the opportunity to sample. The combination of amazing food and incredible wines made for an exceptional event.

The evening kicked off with a reception with canapés of pan-fried leek and tofu gyoza, and wasabi and butter flavoured popcorn. This was served with L’Avenir MCC Blanc de Blanc 2011, a blanc de blanc which was exceptionally creamy with rich flavours of nuts, biscuit and citrus. It had a superb crispness, and the delicate titillation of tiny bubbles left a lingering impression. This was an attractive bottle and incredibly easy to drink.

Starter 1 was a tasty salmon and Sicilian prawn with a fennel Nikkei ceviche in a passion fruit and aji amarillo tiger’s milk. This was served with a Kleine Zalze Chenin Blanc, a delicious and easy drinking wine with concentrated aromas of guava, lychee and sweet melon, and subtle oaky notes which gave the wine a full and elegant finish.

Zima Russian Street Food & Bar

ZIMA

When Zima ‘Russian street food and bar’ opened next to Ronnie Scotts in Soho, we were very hopeful. Russian cuisine has struggled to break onto London scene up until now. Maybe this is because it has taken Russia a couple of decades (after the fall of communism ) to start growing its own chef talent. But right now, the Moscow restaurant scene is frothing with people and places that dig into their Slavic roots, combining them with the techniques of the brave new world (just look at ‘White Rabbit’ in the top 100 restaurants this year).

The man behind the Zima menu is Alexei Zimin, a known chef on the Moscow restaurant scene. With a bushy beard, kindly intense eyes and just a smudge of a smile, he fronts the brand perfectly –a kinda 21st century style Russian bear. Zima is located in a Grade II listed building. Originally Zima was only a bar that occupied the tiny basement, but it has since expanded and taken over the ground and the first floor in the building– a sure sign the guys were doing something right.

We sat on the first floor, which was all starched white table cloths and understated colours , with the ‘Russianness’ of the place only being hinted by some (well curated) hip and happening Russian art. The ground floor ryumochnaya (vodka bar) had a livelier vibe of mainly Russian speaking youngsters. Russian rock music and vintagy enamel bowls of homely food boded well in the bar, but upstairs seemed out of place (and was frankly a tad boring as there were so few customers – we are in Soho prime estate after all).

The service was warm and friendly, with recommendations on what to choose given with a genuine twinkle.

Barbecoa Butchery Class

We attended a butchery class at Jamie Oliver’s Barbecoa at One New Change.

The restaurant has a small section cornered off behind black curtain walls for such events. Dimly lit, with a few tables laid out and a shelved wall filled with a range of whisky bottles, we were drawn to a large table in the centre: a large chopping board, butcher’s knife and bone saw with a spotlight above, literally setting the stage for what was to come.

Whilst we eagerly waited, glasses of prosecco were served and there were portions of crispy pork crackling at each of the tables to whet the appetite. Moroccan spiced lamb puff pastries followed: rich and hearty lamb shoulder, smoked for 14hrs and densely packed into puff pastry. This was tender, flavoursome meat, complemented well by a zingy romesco dipping sauce.

FERDIESFOODLAB

Simon Fernandez, the man behind ferdiesfoodlab, burst onto the supper club scene some seven years ago, with his then legendary fernandezandleluu supper club. His latest pop up being a project sees him in collaboration with the London Kitchen Project in Battersea. A non-profit community centre that started life about six months ago, the London Kitchen Project seats 40 and devotes itself to food, sustainability and the use of 100% renewable energy.

The collaborative project sees ferdiesfoodlab running a series of pop up dinners at the London Kitchen Project approximately every four weeks, serving a six course-tasting menu priced at £45. P and I popped along recently and found the dinner to be well considered and cleverly constructed. The first course was a 5hr slow roast rib of lamb, pulled, pressed, cubed and coated in breadcrumbs, served with garlic Turkish bread and a dip of fresh herbs and lime. The lamb was delicious, moist and moreish, and went swimmingly with the accompanying bread and dip. But the crumbing on the lamb could have been crispier which would have really elevated the dish.

Nespresso Connoisseur Club

NESPRESSO CONNOISSEUR CLUB

I recently attended a very enjoyable and informative session of the Nespresso Connoisseur Club at the newly opened Nespresso branch at Westfields London in White City. The Nespresso Connoisseur Club was designed to provide Nespresso Club Members with a unique learning experience, especially created for all those who want to develop their knowledge of coffee, understand more about the art of coffee making and how to enjoy it at its finest.

There are two types of sessions, both of which are conducted in small groups and last around an hour. One session is known as An Introduction to the Sensory Analysis of Coffee, and this is the session that I attended. This proved to be a fun filled journey where we were shown some of the skills and techniques that the experts use to identify the aromatic profiles of the Nespresso Grand Crus families.

‘Nikkei Cuisine: Japanese Food the South American Way’ by Luiz Hara

‘NIKKEI CUISINE: JAPANESE FOOD THE SOUTH AMERICAN WAY’ BY LUIZ HARA

One of my favourite food bloggers / supper club chefs / cookery writer is none other than Luiz Hara from TheLondonFoodie who cooks some of the most extraordinary Nikkei food imaginable. I have had the the opportunity to sample his cooking on numerous occasions at his supper club events in his East London home, and following on from the success of his supper clubs, Luiz has recently brought out his first cookbook. Called ‘Nikkei Cuisine: Japanese Food the South American Way’, the book is a celebration of the best that South American inspired Japanese cooking can offer.

I strongly urge you to try one of his supper clubs which you can book through his website. Failing that, you can try and replicate some of his recipes, one of which, I had the opportunity to help prepare at his cookery class. The dish was salmon and passion fruit tiradito which I love because it is so fresh, lively on the palate, tangy and visually appealing. I am featuring the recipe below and I hope you enjoy it as much as I do.
